Green Lentil Soup Recipe

This is a basic Green Lentil Soup that can be varied in many ways by adding herbs or spices. I particularly like it with a teaspoon of Worcestershire sauce.

  • 200 g (7 oz) green lentils
  • 1 onion, chopped finely
  • 1 garlic clove, crushed
  • 1 liter (1¾ pints) vegetable stock
  • 1 tablespoon cornflour
  • salt and peper


  1. Put the lentils, onion, garlic and stock in a saucepan and bring to the boil.
  2. Simmer for 40 minutes, until cooked.
  3. Mix the cornflour with a little cold water and stir into the soup.
  4. Season well and serve.


Make this into green lentil and lemon soup by adding the juice of half a lemon before serving.
